Baked Eggs in Prosciutto – filled Portobello Mushrooms

Decided that for lunch I’d try this recipe I’d come across here http://paleospirit.com/2013/paleo-baked-eggs-prosciutto-portobello-mushroom-caps/

Had a little trouble getting the egg to stay in the mushroom on the 1st go, so I moved the other 2 to  ramekins – probably need deeper mushroom cups and smaller eggs! But they were very yummy!
